Carolina Reaper Chilli Seeds

[110 days to red] Looking for the hottest pepper on the planet, then look look no further. These little gnarled peppers are rated at an average of 1,641,000 Scoville Heat Units (SHU). (For comparison, jalapeños average between 2,500 – 8,000 SHU.) And while there are a few claims of chilies that have rated higher, none have ever done so officially, so the Carolina Reaper still has the top spot.

Small, gnarled, and usually red, these little chilies look a bit like something out of a horror flick, with most sporting warty bumps and a scorpion’s tail. Their size ranges from 1-2 inches wide (2.5–5 cm) and 2-3 inches long (5–7.6 cm). And while you might think it’s all about the heat, it turns out that the Carolina Reaper also has a fantastic flavour, one that hits you right before the heat kicks in.

Obviously you don’t want to just take a bite of these little demons. In fact, you shouldn’t even handle them without gloves. But it’s lovely to cook with or make an infusion of. It’s amazing in jam too. But you don’t need much. Honestly, the fruit off of two plants should be enough for the year. Also, if you’re planning on drying them, it’s best to hang them and let them dry naturally—don’t use a dehydrator. The fumes can be well near toxic.
